USDA Certified, Custom Cut

Please fill out your cut sheets online within one week of your kill date for beef and 48 hours for hogs, lambs, and goats. If no cut sheet has been submitted, we will cut to the Butcher’s recommendation.

Please read through cut sheet instructions carefully.

We’ve provided our butcher’s recommendations for each type of animal, marked with an asterisk(*). If you are still unsure of a particular cut and would like to confirm possibilities and options before making your selection, we encourage you to talk to your producer or to call our front office at (307) 381-2263 and we’ll be glad to answer any questions.
